La amiga Manoli de mi mujer, como sabe que ando de chef aficionado por el mundo, me facilitó un libro que había encontrado por esas ferias del libro.
El libro es "anónimo" y se titula "Un Recetario de Cocina Alcoyana del Siglo XIX". Esta escrito a mano, con esa peculiar letra de historiador, que me cuesta de entender, tanto por la forma de sus letras como por los conceptos que usa para exponer cada receta, de modo que lo interpreto a mi manera y os expongo a continuación, tanto lo que dice de cada receta, como los pasos que he elaborado.
Voy a copiaros lo que dice el libro, respecto a esta receta de SUSPIROS :
"(...) Por cada clara de huevo que deberá batirse en punto de diamante se le ponen 2 onzas azúcar pasado por el tamíz y un poco de limón rallado. Se hacen los suspiros y se llevan al horno (...)"
He buscado y cada onza son 28 gr, equivalente a 2 cucharadas y lo azúcar pasado por tamiz, he considerado que se referería a azúcar glass...ahí va el resultado. Bonitos y buenos, pero se me pegaron demasiado a los moldes de magdalenas, A ver si os salen mejor. GXL.

- 6 c/s azúcar glass (creo que me equivoque, al leerlo de nuevo, deberían ser 2onzas por 2c/s por 3 claras =12, no sé)
- 1 c/s ralladura de limón

- Hice el azúcar glass triturando el azúcar con la Thermomix.

- Ralladura de limón.

- Separar yemas y claras.

- En el bol de las claras, batir las claras a punto de diamante (punto de nieve).

- Añadir la ralladura de limón y el azúcar glass (creo que me quedé corto, por eso estaban como vacíos, cuando los saqué del horno).

- Remover con la espátula, hasta ver la mezcla homogénea.

- Elegí los moldes de magdalenas.

- Pasar la mezcla a la manga pastelera e ir rellenando los moldes. Lo iba rellenando dándoles círculos, hasta formar la cumbre con un piquito.

- Introducir en el horno, previamente precalentado a 180 ºC, calor por aire y por abajo. Durante 15 min.

- Recién sacados del horno.

- Emplatar para servir.
