- 1 chorizo tierno para cocinar
- 1 cebolla grande
- 100-125 gr. nueces
- 150 gr. queso rallado

- Quitar los rabos de las espinacas, las cortas un poco y las dejas en agua, remueves y sacas a la escurridera, para reservar.
- Precalentar el horno a 270 ºC
- Sartén g-r-a-n-d-e con aceite de oliva, pones la cebolla cortadita (+ sal), a fuego lento, para que se haga blanda, antes de que se dore, añadir el chorizo picadito (quitas la tripa y lo desmenuzas) y que se haga durante 3-4 minutos.
- Incorporar las espinacas (+ sal) y rehogarlo todo junto.
- Bechamel: yo la hago con la thermonix (5 minutos hecha), tu a tu manera, que te quede espesa sin grumos, puedes recurrir a la batidora para homogeneizarla. (no se te olviden las nueces picadas)
- Pasar el rehogado de espinacas a una cazuela ( si es de barro mejor) y verter el bechamel.
- Empolvorear con el queso rallado.
- La cazuela al horno, para gratinar a 270 ºC, hasta quete quede bien dorado ( unos 7-8 minutos).
- Recién sacadas del horno. Servir caliente
